Wundercooks Presents Roasted Rainbow Salad

Ingredients

Roasted

12 baby carrots (halved)

2 beets (peeled & thinly sliced)

1 bunch of rainbow chard (chopped)

2 garlic cloves (minced)

2 tbsp olive oil

1/4 tsp salt

Dressing

1/2 lemon (juiced)

1/2 tbsp shallots (minced)

6 sprigs of thyme leaves (minced)

1 tbsp olive oil

3 salt pinches

2 pepper pinches

Tips & Notes

You don’t have to peel the beets. The peel will give them a more ‘earthy’ taste.
You can use 1-2 regular carrots
(Peeled & Chopped) instead of baby carrots.
Out of thyme? Parsley, oregano, dill or any of your favorite fresh herbs will work great!
